Hoba Miso – A breakfast speciality with a proud and inspiring history
Long long ago, the Hida Region was assailed by a cruel winter and engulfed in a deep snow that left the people cold and hungry. It is said that this was the time when the brave and resourceful people began baking miso with magnolia leaves. Not only could they survive the harsh winter, but they discovered a dish that was both delicious and healthful, able to warm their stomachs and kill harmful bacteria.
Hida Gyu – A dinner speciality with an unparalleled and legendary history
Japan has long bred the famous wagyu cow with its remarkable marbled meat that also boasts a high level of oleaginous unsaturated fat. So not only is this meat uniquely tender, but it is also healthier.
Hida is one of the few regions famous for the successful breeding of wagyu cows. The origin of today’s Hida-gyu was a farmer’s encounter with a single bull named ‘Yasufuku’ in 1981. Yasufuku and his offspring is said to have had the ideal genetic makeup to produce calves with perfect qualities
